Abstract

In the social sciences, the social category is one of the main aspects to explain the dynamics of human groups, together we can find it with categories such as culture, society, community and lately with globalization, and adjacent to them are the of politics, ideology, education, worldview, customs, clothing, food, health, etc. It is enough to resort to anthropology manuals to be able to access what we are pointing out. Our objective, in this work, is precise: what are the social aspects, with respect to the uses and ways of eating, in the city of Arequipa in the latter. decades. During the development of the work we will link the relationship between the social, the uses and the ways of eating. The method of autoethnography is what has allowed us to carry out the work. Feeding, for all living beings within nature, is essential, it is a biological necessity to maintain themselves as a species. In the 1960s, last century, I was in Arequipa and they talked about mocontullo, but today it is no longer spoken or used. Chicha, its consumption has diversified, the questions are: why does one disappear or fall into disuse and another remains and diversifies? Is it the social aspect or another aspect that determines the permanence or change? Is it that within human groups, transformation, change, permanence, diversification have always been permanent patterns and why?
